Day 98: Bake potato fun

Day 98 of #365 Creative #Ideas to do with your kids: Do your kids love baked potatoes? Turn baked potatoes into mice or bunnies by filling them with savoury cottage cheese and adding faces.
What you need:
potatoes for baking (allow one potato per portion)
1–2 tablespoons cottage cheese or cream cheese (plain or flavoured), per potato
chopped chives
mayonnaise
salt and black pepper to taste
cucumber, carrots, chives, peas, courgettes, for garnish
1. Bake the potatoes until done. When cool enough to handle, cut off the top, scoop out the centre and place the cooked potato flesh in a bowl.
2. Combine the cooked potato with the cottage cheese or cream cheese, chopped chives and a
little mayonnaise. Add salt and pepper to taste. Stuff each potato with one or two tablespoons
of the mixture.
3. Create an animal face by adding peas for the eyes, carrot or cucumber slices for the ears, half
a cherry tomato for the nose and chives or a thin strip of courgette for the whiskers and tail.
Tip
• Baked potatoes (or sweet potatoes) can be stuffed with a variety of fillings. Scoop
out the flesh and combine with any of the following: tuna mayonnaise, ready-made
savoury mince, baked beans, grated cheese, shredded cooked chicken,cooked or raw
mushrooms, flaked cooked salmon. Reheat before serving, if necessary.
