Day 111 of #365 Creative #Ideas to do with your kids: Have you ever made ice cream sandwiches? Use bought ginger biscuits for a quick treat, or make your own cookies. If your children don’t like ginger biscuits, use any firm, round biscuits.
ginger biscuits (2 per sandwich)
vanilla ice cream, softened just enough
for easy scooping
1. Place the bottom biscuits on a baking tray.
2. Working quickly, scoop a small ball of ice cream onto each biscuit.
3. Top with another biscuit and gently squeeze them together.
4. Place the ice cream sandwiches in the freezer for at least 30 minutes to set
